Farmer’s Market Chicken
1/2 lb. spaghetti, uncooked – Mueller’s BOGO
4 small boneless,skinless, chicken breasts – HT Frozen Buy 2 Get 3 Free
1/2 t black pepper
2 T olive oil, divided – HT 3.57/17 oz.
3 zucchini,sliced – HT Farmer’s Market .99/lb.
3 yellow squash, sliced – HT Farmer’s Market .99/lb.
4 cloves garlic, minced
1 1/2 c shredded mozzarella – Sargento BOGO
1/4 c chopped fresh basil
1/4 c grated parmesan
Cook pasta as directed on package.
Meanwhile, sprinkle chicken with pepper, heat 1 T olive oil in large skillet. Add chicken to skillet, cook 5-7 minutes on each side, until done through. Remove, cover to keep warm, and set aside.
Add remaining oil to skillet. Add zucchini, squash, and garlic, stir fry for about 3 minutes until tender.
Drain pasta reserving 1/4 c pasta water. Toss pasta with reserved water. Top with chicken, zucchini, squash, and remaining ingredients.
