Menu Plan Monday

Lunches: Leftovers, salads, and broccoli soup

Monday-Chicken Vegetable Soup (no noodles)

Tuesday-BBQ chicken on the grill, fresh veggies, and mac & cheese (for hubby)

Wednesday-Dinner with Friends

Thursday-Date Night!

Friday-Crockpot pork, homemade fries, and salad

Saturday Lunch- Eggs, bacon, spinach, and toast

Saturday-Hubby’s Birthday (not sure whether we will stay home or go out yet, it is up to him)

Sunday Lunch-Leftover pork and veggies

Sunday Dinner- Sticky Chicken, potatoes, and steamed veggies

Chicken Fajita Bonus Recipe

January 24, 2012

 

As you all know, I am striving to eat a little healthier and cook at home!  We made these chicken fajitas on Saturday, and I thought they were delicious!

As you can see, I had mine with some cheddar cheese and a little sour cream.  Yum!

Menu Plan Monday

For lunches this week, I plan to have broccoli soup, salads, leftover chicken fajitas, and other leftovers.

Monday-Taco Stuffed Peppers

Tuesday-Grilled Chicken, salad, and steamed veggies

Wednesday-Dinner with Friends

Thursday-Date Night!

Friday-Thai Peanut Chicken (I hope I can find the recipe again, I made this once and it was delicious!)

Saturday lunch-Leftovers or Brunch

Saturday-Roast, potatoes and carrots

Sunday lunch-Spaghetti with meatballs and fresh veggies

Sunday-Leftovers

Menu Plan Monday

Lunches at school this week will consist of salads, broccoli soup, and leftovers. I am taking the time today (a day off from school!) to make a big pot of yummy broccoli and cauliflower soup!

Monday Brunch- Mushroom, Pepper and Onion Omelets, bacon (for hubby), and whole wheat toast

Monday-Crockpot pork ribs, baked potatoes, and fresh veggies

Tuesday-Soup Night (Hubby will have Brunswick Stew from the freezer, and I will have some broccoli soup.)

Wednesday-Dinner with Friends

Thursday-Date Night (still using gift cards from Christmas)

Friday-Guys night out and girl’s night in! Not sure what we will be up to yet, but it will probably require dipping into our entertainment envelope.

Saturday Lunch-Pulled pork (from freezer) sandwiches and salad (I will probably have pork on my salad.)

Saturday-Chicken Fajitas with peppers, onions, and whole wheat wraps and black beans

Sunday Lunch-Cheeseburgers on the grill, steamed veggies

Sunday-Leftovers from the week!
