Garden

DSCN1344

These are just a sampling of the cucumbers I have picked off of my ONE cucumber plant this week.  I plan to give a few away, and hubby won’t eat them.  I can only eat so much.  They are delicious though.  Any ideas or recipes for using cucumbers?

My garden is still producing cucumbers and tomatoes like crazy.  (Not really, but with only me eating them, it seems like it.)

Easy Pasta Salad

fresh veggies from the garden (I used tomatoes, banana peppers, and cucumbers this time, but you can use whatever you have.)

spiral pasta, cooked per instructions

Italian dressing

Chop the veggies, and mix in pasta and dressing.  I sometimes add pepperoni, mozzarella or parmesan.

Enjoy!

Well, my zucchini plant definitely bit the dust this week.  I still have tomatoes, cucumbers, and peppers that are doing fairly well.  I haven’t quite had the produce to do salsa or spaghetti sauce, but I have had enough that I have to keep eating!

How does your garden grow?  Are you satisfied with the produce?

My sad surprise upon returning from WV is that I think my zucchini plant that was doing so well is almost dead. :( I hate squash bugs.  I also found out that most people call them stink bugs.

My happy surprise it that my cucumber has taken over about half of the garden.  It is beautiful and thriving.

I also have several ripe and almost ripe tomatoes!

I had a tomato sandwich Thursday for lunch, and I think that is calling my name again today!

We finally had some rain yesterday evening!  My garden will be happy, and I am hoping that it will recover.  We have been watering it all week, but most days the temperature was near 100 degrees.

Yes, that is my huge zucchini on the left of the picture, and my three squash plants that just won’t grow on the right.  Any suggestions with my squash?

These are my carrots!  I am getting excited to dig them up, but alas, I will wait a while longer!

I am also patiently waiting for my first pepper that isn’t a jalapeno!

Yes, you read that right!  I finally have (small) ripe tomatoes!  They don’t look very pretty, but they sure are yummy.  Otherwise, we are recovering from a very hot week where the garden didn’t get much water, because we were out of town.
