
It is the time of year to really enjoy those garden fresh tomatoes. Here are a couple of my ideas for using them up:
- Summer Salads
- Pasta Salad
- Salsa
- Sandwiches
- Canned Tomatoes
- Homemade Spaghetti Sauce
Gluten-Free BLP Sandwich
- Garden tomato sliced
- Banana pepper, chopped
- Swiss or provolone cheese
- Cooked bacon
- Udi’s Frozen Gluten Free bread
Gluten free bread usually comes frozen, unless you make your own. Put your toaster on the longest setting and toast it, so that the bread holds up better. I didn’t have any lettuce, but the lettuce can help the bread hold up too. Stack your sandwich up, and add a little mayo or mustard if you want. Enjoy!

I’ll take everything but the banana peppers; Dh and I both can handle them. That actually sounds good for dinner!

I’ve realized that going to conferences can be decidedly unfrugal, if I let it be.
I had BLTs probably a little over a month ago. We had some banana peppers that I didn’t know what to do with yet and tried putting it on the sandwich. It was awesome! Never before did I think of trying it, but it was great!
I used to use a ton of paper towels. Instead, I use a clean tea towel when I am cooking and washing my hands constantly. I still use paper towels, but less than 1 roll a month now.
