Jamaican Jerk Drumsticks
1 medium onion, chopped – HT Farmer’s Market sweet red or Georgia Vidalia 1.29/lb.
1 jalapeno pepper, halved and seeded – HT hot peppers 1.69/lb.
1 clove garlic, chopped
1 2″ piece fresh gingeroot, peeled and chopped – Gingeroot bulb 2.99/lb.
1/4 t salt
1/4 t pepper
1 1/2 t sugar
1 1/2 t allspice
1/2 c orange juice – HT Premium Orange Juice 2/5.00/59 oz.
1/2 white wine vinegar
1/4 c soy sauce
8 – 12 large chicken drumsticks – HT Value Pack 1.37/lb.
Process onion, pepper, garlic, ginger, salt, pepper, and allspice in food processor until smooth. Add orange juice, vinegar, and soy sauce and blend. Place chicken in a large ziplock bag, pour jerk mixture over, seal and turn several times to cover chicken well. Place in the refrigerator at least 30 minutes and up to 24 hours. Remove drumsticks from bag and pat dry with paper towels. Pour jerk mixture into a saucepan and bring to a boil. Simmer for 2 minutes. Cook chicken on grill, turning and basting with sauce about 30 minutes, or until done through.
