I adapted this one from Meg who is my fabulous blog helper. It was my very first attempt with Quinoa, and I liked it! Her recipe contained toast nuts and left out the Frank’s hot sauce. (Hubby is not a nut fan, and I wanted him to try this.) I also cut the recipe in 1/4-1/2. I used this as a side dish, and this makes plenty for that purpose!

Quinoa Side Dish Recipe
1/2 cup quinoa, rinsed well
1 cup water
1 tsp salt
extra virgin olive oil
2 medium potatoes diced
1/2 large onion chopped
1 clove garlic
1/2-1 cup of asparagus
a few dashes of Frank’s hot sauce (optional)
Combine quinoa, water, and salt in a pot. Cook according to package instructions. Drain, set aside. Heat the olive oil in a frying pan. Add onions, garlic and potatoes and cook until potatoes are tender. Add in asparagus when potatoes and onions are almost finished. Salt to taste and set aside. Combine everything together and enjoy!

I have heard alot about quinoa lately, and curious to try it. What does it taste like?
It almost has a light nutty flavor, although it is not related to nuts. Hubby said that it tasted like fish eggs without the fish flavor, whatever that means! :)
