Another great recipe this week from my mother-in-law!!
Grilled Chicken Over Spinach
1 – 2 T olive oil
1 T cider vinegar
1 clove garlic, minced
1 t dried thyme
1/2 t dried oregano
1/2 t cayenne pepper
1/4 t salt
dash pepper
Combine in a small bowl, mix well. Rub onto 4 boneless skinless chicken breasts – HT Value Pack 2.47/lb.
Grill, uncovered, over medium heat about 7 minutes on each side until juices run clear. In a large skillet saute for 1 minute:
2 T finely chopped onion – Georgia Sweet Vidalia 1.29/lb.
1 clove garlic, minced
1 – 2 T olive oil
Add:
1/2 lb. fresh mushrooms, sliced – HT Farmer’s Market 1.89/8 oz.
Saute 3 to 4 minutes until tender. Add:
1 package fresh spinach, torn – Fresh Express Baby Spinach 3.49
Saute for 2 minutes until wilted. Transfer to plates, top with chicken.
