Bargain Meal of the Week at Harris Teeter

Sticky Chicken

1 teaspoon salt
2 teaspoons paprika
1 teaspoon cayenne pepper
1 teaspoon onion powder
1 teaspoon thyme
1 teaspoon white pepper
1/2 teaspoon garlic powder
1/2 teaspoon black pepper
1 large roasting chicken (3-4 lbs.)  ($.49 per lb. this week!)
1 cup chopped onion

In a small bowl, thoroughly combine all the spices. Remove giblets from chicken, clean the cavity well and pat dry with paper towels. Rub the spice mixture into the chicken, both inside and out, making sure it is evenly distributed and down deep into the skin. Put the bird into the crockpot and do not add any liquid. As the cooking process goes on it will produce it's own juices. Cook on low 8 - 10 hours and it will be falling off the bone tender.

I know this recipe is a repeat, but believe me, it is worth repeating! 

I would probably pair this with some rice (Rice a Roni or Pasta Roni 5/$5  $1/3  1/3 RP) and veggies (Del Monte Corn, Peas, or Green Beans 14.5-15.25 oz. Buy 2, Get 3 Free).

Wow! What a week!

Some tips to remember about Walgreens and RR:

• Some exclusions do apply, for example RR can’t be used on gift cards, stamps, alcohol, etc.
• Most RR won’t roll on the exact same item or even the same manufacturer. If you buy a toothbrush and get a RR, you can’t use that RR to buy another toothbrush and get another RR.
• You need to spend more than the value of the RR. For example, if you have a $10RR, you’d need to spend at least $10.01 when you checkout.
• An RR is considered a coupon. When you check-out, you must have as many items as you do coupons. So if you are “stacking” coupons and have two for any particular item, you must make sure that you have another item that doesn’t have a coupon in order to use it.

Free Sources for Newspaper Coupon Inserts

Buying newspapers for coupons each week is not cheap.  As you have probably noticed, I try to buy mine at Walgreens with RR.  But I have a somewhat unique situation.  I have no family nearby, the largest paper in my area doesn’t do home delivery in my county, and there aren’t any stores I know of that do a discounted bundle.  Below are some ideas I have run across for getting your newspaper coupons cheap or free!

1. Get your non-couponing family to save you inserts.  This is an easy one, and many family members are willing to help out!  Just be careful, when they see all your free stash, they might keep the coupons for themselves! 
2. Get your co-workers to help out.   I have a very sweet woman at work who sends her coupons to me almost every Monday.  She only cuts a few and gives me the rest.  I don’t count on it, but I take it as a nice surprise.  Some businesses have a subscription to the paper, and you might be able to pick up some inserts there.
3. Keep your eyes peeled at restaurants and coffee shops.  Many people leave their whole Sunday paper for others to enjoy.  Make sure it is not property of the restaurant before taking the coupons out!
4. Recycle bins and centers, also known as Dumpster Diving.  You heard me right.  There are people out there who do this on a weekly basis.  I know one very kind lady in our area that gets her inserts this way.  I am truly not brave enough for this.  (I would also ask permission here, because you don’t want in trouble for stealing!) I have never figured this one out, but I figure, if you ask and it is being thrown out, it is fair game. 
5. Check out the library.  Many libraries have newspaper subscriptions.  You could ask the librarian to save them for you.  Some libraries also have take a coupon, leave a coupon boxes.

Just a quick tip today! Sign up online for newsletters for each store near you. I get coupons from CVS, Riteaid, and Walgreens in my email all the time! I also get the Harris Teeter e-vic ad, and I am signed up for Lowes Foods Instasave. I keep several email accounts to avoid inbox overload. (One for blogging, one for surveys, one for work, and one for stores and offers.) That way I know what I need to check each day.

Menu Plan Monday

Welcome!  This month my family has been eating from the pantry.  It has been a little hard to resist all the great deals in the grocery stores, but I have been relatively successful. While some people are starting to run low on food, I could keep this up for a while!

Bargain Meal of the Week for Harris Teeter

I know it is winter, but I have been in the mood for a good meal salad.  This one is delicious!

Cajun Chicken Salad

Ingredients

• 1/4 cup bacon crumbles or bacon bits
• 4  boneless, skinless chicken breasts, cut into strips (BOGO)
• 1 teaspoon Cajun seasoning
• 1 organic lettuce (Earth Bound Farms BOGO)
• 1/2 cup Caesar salad dressing (or your favorite dressing, I like ranch)
• 1/3 cup grated Parmesan or Mozzarella cheese
• cherry or plum tomatoes halved

Directions

1. In a preheated skillet, add the chicken, seasoning mix and a small amount of your preferred oil. Cook until chicken is golden brown. Place aside to add to salad.
2. In a salad bowl, combine lettuce, enough salad dressing to coat,  cheese and bacon.  (If people in your family prefer to make their own, don’t feel bad, just put all the ingredients on the table.)
3. Top with chicken and enjoy!

Walgreens Matchups 1/24

Some tips to remember about Walgreens and RR:

• Some exclusions do apply, for example RR can’t be used on gift cards, stamps, alcohol, etc.
• Most RR won’t roll on the exact same item or even the same manufacturer. If you buy a toothbrush and get a RR, you can’t use that RR to buy another toothbrush and get another RR.
• You need to spend more than the value of the RR. For example, if you have a $10RR, you’d need to spend at least $10.01 when you checkout.
• An RR is considered a coupon. When you check-out, you must have as many items as you do coupons. So if you are “stacking” coupons and have two for any particular item, you must make sure that you have another item that doesn’t have a coupon in order to use it.

Freebie Shopping at Lowes Foods

I will admit, I paid for the drinks (hubby request) and the eggs (I am out).  I got the 4 packages of turkey kielbasa free along with 4 bags of free veggies!  This trip cost me $4.80.  (It would have been $1 less, because I had a coupon for the eggs, but they were reduced and cashier wouldn’t take the coupon.)  It is hard to fight a battle when you get three bags of groceries for that cheap!

Eat From the Pantry Challenge Budget Update

I actually spent a little too much this week out of pocket, but I will receive $13.50 back in rebates!

This cost me $13.25, but I will get $7.50 back in rebates. It is also not all groceries, but I find it hard to separate out. 

This was $10.43, but I will get $6.00 back in rebates.
I also bought milk, bread, lettuce, and a few freebies at Harris Teeter for $7.58.
Total Spent for the week:  $31.26 with $13 back in rebates  ($18.26)

Help for Haiti Update

Thanks to the generosity of many bloggers and commenters, I had around 100 hits to help Haiti.  I will be sending my $25.00 to Unicef today.  I can’t do much more than that right now, but I am relieved to know that my school, professional group, and church will be helping as well!!!  Hopefully everyone working together in little ways will make a big difference!

Thrifty Thursday (Saving on Clothes)

I want to have a discussion with you today, because I am not the greatest expert on today’s topic.  I am going to go ahead and get this out there.  I am 6 feet tall.  It is hard to shop for size 14 tall.  That is all for now!

Saving on Clothing

1.  Clearance racks.  This is the one I have the most success with.  I love the clearance at Kohl’s and New York and Company.  Being a teacher, I have a dress code-nice clothes, no jeans.  I also grab a lot of hubby’s wardrobe on Kohl’s clearance racks.   Kid’s can be hard to shop for on clearance racks, because you never know what size they will be the next year!

2.  Goodwill and thrift shops.  I have heard many people touting their magnificent finds, especially in bigger cities.  I, personally, can never find any pants there.  There must not be too many tall women who donate their clothes.  This is something on my list to check out more.  I also know that the kids clothing gets picked over really quickly.  How do you all feel about it?

3. Hand me downs.  For adults and children, hand me downs can be a real source of free clothing.  My favorite sweater right now belonged to my SIL, who passed it to my MIL, who passed it to me almost brand new!  This can go two ways.  If you have a nice sweater or shirt that you just don’t like how it fits, you can pass it along to a friend or family member. I lived in hand me downs as a girl.  One of my mom’s friends had a daughter several years older, and I always looked forward to that bag of clothes.

4. Garage Sales.  I have to admit that my mom loves garage sales, but I hate them.  She can find a diamond in the rough, but all I see is 80’s clothes and kids items.  (Size 14 tall remember?)  I do know I will use yard sales a source of kids clothing when I have them, because kids grow so fast!
