Healthier Chili Mac
1 cup whole wheat elbow macaroni
1 lb. ground chicken (BOGO this week)
1/2 cup chopped onion
1 can (16 oz) kidney beans, undrained
1 can (15 oz/16 oz) tomato sauce ($1 for HT organic)
1 cup water
1 teaspoon chili powder
1 teaspoon salt
1 cup shredded Cheddar cheese (2%) (BOGO)
Directions
In a large skillet, brown onion with ground chicken, use little oil if necessary. Add kidney beans, tomato sauce, water, chili powder, macaroni and salt. Cover and simmer on medium low for 15 minutes. Add cheese and continue to heat until cheese is melted.
Note: I haven’t tested this one! It is a combination of a couple of recipes that I found, so the time is approximate. Watch the macaroni carefully to be sure it cooks through, but does not get overcooked.
