Bargain Meal of the Week for Harris Teeter: Easy Fried Chicken

It’s time for Bargain Meals!   Erin over at $5 Dinners hosts a gathering of blogs all over the U.S., creating frugal meals straight from the sales circulars of their favorite stores. I have to admit I cheated on my weekly menu and made this recipe instead of the Sticky Chicken.  We ate ours with spaghetti, but I have another recommendation below.

Mom’s Easy Fried Chicken

The ingredients in this recipe aren’t specifically measured, because my mom doesn’t specifically measure.  Use what you need to follow the directions!

Boneless Skinless Chicken Breasts (1 per person )  Buy 1 Package Get 2 Free

Honey Mustard

Bread Crumbs (I used parmesan)

Vegetable oil

Directions

1. Pour small amount of honey mustard over chicken breasts and massage in until the breasts are lightly coated.

2. Roll chicken in bread crumbs until entirely coated.

3. “Fry” breasts in heated oil until cooked through.  I just barely coated the bottom of my frying pan with oil.  HINT: Don’t turn the breasts too often.  Let the chicken brown completely on one side before turning.

These are the easiest, most delicious fried chicken breasts I have ever tasted!

Serve with Alexia Spicy Sweet Potato Julienne Fries  ($1.00) and your favorite frozen veggies!
