Well, my May budget just shrank!

All NC state employees (yes I am NC teacher) are being given ten hours of flexible time and losing .5% of our yearly salary. It is all being taken out in May! There goes a big part of my extras for the month! At least I try to be frugal and have a great stockpile! This will really hurt some families that are already in trouble. Click here to see an article about it. The thing that really stinks is that teachers won't even be able to use their hours on a day when the students are there, because I know they won't be paying for subs!

CVS Idea



I got all of this stuff and 3 cases of water for around $15 on my Flexible Spending Account card and .91 cash. I also still need to return the Visine, because it didn't work for the deal. What I did was buy all the FSA items in one transaction using a 3 off 15, I also used $1 coupons on the the Bandaids and a $2 CRT and $1 coupon on the Neosporin. I earned $10 ECB which I used to buy the water, candy, and tea. I only spent .91 cash OOP, and I still have the exact ECBs that I started with. Anytime I use my FSA card at the drugstore, I try to roll it into rebates or ECB. That way I save money twice. (The average FSA card saves people about 30% of the amount used in taxes.) If you don't have a FSA or HSA, check into it! I use my for doctor visits, chiropractor visits, prescriptions, and OTC meds. I deduct $1000 yearly from my pay before taxes, and I am in the 10% bracket, which means I save at least $100 per year using my FSA. In this case, I spent $15 on it, and earned $10 ECB which then bought me even more stuff!

Thursday's Cajun Chicken

This is yet another secret family recipe from my mother-in-law (who by the way is an amazing cook!).

Cajun Chicken

1/3 cup of honey
3 T of water
3 T of Dijon mustard
2 T canola oil
1 t lemon juice
1 t garlic salt
3 t cajun spice
boneless skinless chicken breasts (I usually use 3 with this amount of sauce.)

Cut chicken into bite size squares, saute in oil, combine all other ingredients in a bowl, add mixture to the chicken, bring to a boil in pan, reduce heat and simmer for 20 min.

I usually serve this over brown rice. It is delicious!

Vacationing At Home

My husband surprised me with a day trip to Lake Lure and Chimney Rock today. It gave me the idea for a new series: vacationing at home on a budget. We usually do something like this trip about once a month during the summer. Since I didn't know about this trip, and I didn't have time to think frugally, it cost approximately $91 including gas. I could have shaved a little off there, and I will show you how on the next trip!

On Saturday, Walgreens paid me two dollars it RR to take 12 bottles of shampoo. I spent $6 in RR and $4 in cash. I received $12 in RR!

I sometimes donate to the needy, but since it was my first day back to school and I don't care for this shampoo, I took it in for free. It was gone before lunch time! Happy Back to School Ladies!

Harris Teeter Deals-Today and Tomorrow!



I got 3 capri suns drinks 2 for .88 each after $1 coupon and 1 for $1.88. Two daisy sour creams were free after coupon. One greek yogurt for .50 that I wanted to try (I had two more coupons, but didn't want it to go to waste if I didn't like it). Two Grillmates packets for free after coupon that hubby will use. One bag of Grande Torilla Chips for .50 after coupon. The chips also had a try me free sticker. The Windex was only .40 after the BOGO sale and coupon.

OOP: a little over $5 with $3.49 back in rebates!

Two Shopping Rules I (almost always) Follow:

1. As you can see from the capri sun, I follow the rule of getting one paper/coupon inserts per family member. Sometimes this limits the amount of things I can get for a great deal, but mostly it helps me keep up with clipping and filing.

2. Don't buy things you don't like or that you can't donate. I mostly donate things that are free or money makers. See my Walgreens post tomorrow for an example!

Frugal and Fast Dinners



Last summer, I bought these six chicken leg quarters for $1.50. I thawed them out last night, and marinated them in pairs of two (dry rub from sticky fingers, italian dressing, and Louisiana red pepper). My hubby grilled all six pieces on our grill, and he added BBQ sauce to the dry rub pieces. We ate the BBQ chicken with stuffing and fresh veggies last night. Delicious! As I am making up my menu for the week today, I plan to include the Italian chicken in some alfredo and the spicy chicken in fajitas or stir fry. One mess and three meals of meat for only $1.50 (the marinades were free or very close)!

My Green Thumb


I was so excited to get my "garden" started. We are in the foothills of NC, so everyone said wait until after Easter to plant. I waited patiently, and today hubby and I worked hard to start some small plants and seeds.

We planted tomatoes, carrots, lettuce, corn (probably won't work but it's worth a try), squash, okra, and cantaloupe. We hope to add a zucchini plant and a watermelon. Hubby doesn't like many veggies, so other than the corn and lettuce, we just planted two of each veggie.

Last year our garden was way too small for what we planted, so this year we expanded. The only problem is that we planted a little more too!

I recommend a garden to anyone who has enough room. Free produce right in your backyard. Anyone else itching to plant or already have a garden going?

Mail Call

For those of you that are skeptical about rebates and rewards programs, you should have checked my mail this morning. I sent in three separate rebates to a company (for different items) at the end of January, and today in the mail, three checks totaling $20! I also received a $21.00 reward card to Office Max (rewards for teachers) for ink and router purchases made in January.

Using Free Cake Mixes

Here is a great recipe from my mama. She is the cook in the family

Snickerdoodle Cake

1 cup whole milk
1 stick butter, melted
3 large eggs
1 teaspoon pure vanilla extract
2 teaspoons cinnamon
1 white cake mix


Preheat oven to 350. Generously grease and flour 2 round cake pans or one 13\9 inch pan. Place the cake mix, milk, melted butter, eggs, vanilla, and cinnamon in a large mixing bowl. Blend with and electric mixer on low for 1 min. scrape down sides of bowl and increase speed to medium for 2 more min. pour batter into pans. Bake until golden brown and springs back when lightly pressed with finger. Remove from oven and cool for 10 to 15 min. Then remove from pans. Let cool completely before icing with cinnamon butter cream icing.

Icing recipe

One stick butter at room temp. 3 3\4 cups confectioners’ sugar, sifted 3 or 4 tablespoons of milk, 1 teaspoon vanilla, and 1 teaspoon of cinnamon

Warning this cake disappears quickly after baking (it's that good).

TIP: I bought three of the multivitamin drinks so that the $4 coupon wouldn't beep. They still all ended up free after coupon and rebate, even though the rebate limit is only one.

I was really glad to find the drink mixes, because they don't have them yet at either of my Walgreens in NC.

New Heading

Mail Call!

Today I received my March Riteaid Rebates $32.XX and a check from the pizza rebate for $7.50. I cannot believe how fast the pizza rebate came, it seems like I just sent it out a week or two ago! Budget Back on Track?

With our three day weekend going over budget, I have been working hard to get back on track. Using my $20 challenge last week, I was able to make it through without charging anything (yea!)until payday. Also, my power and insurance bills were a little lower this month due to other circumstances. I think we are back on track! Although these next two weeks, I do have some challenges. I am traveling to WV to see my family on the school break, so I have to budget more for gas. I am also planning to plant my garden when I return, so there will be some money used for plants and seeds. I have $300 to last me until the 22nd. I will stay on track for purchases and get my garden planted!

Shower Gift deals

Getting the Scrubbing Bubbles Shower Cleaner for $2.99 at Harris Teeter yesterday reminded me of something I haven't written about much...gifts. When you are into couponing, coming up with gifts is a little easier! The best bridal shower and housewarming gift that I have created with is a large laundry basket of cleaning supplies. Practical and everyone needs them! I usually try to put an automatic shower cleaner in the center, and fill the basket with other supplies I get for cheap or free. I have given baskets with around $70 values for at most $20! The next time I make one up, I will post a picture, but this is something anyone can do and that everyone seems to really like!

Today I got several things for free!

1 blockbuster rental (redeemed from doing surveys on e-rewards)

1 $25 gift card for filling a prescription at Riteaid (only put $10 on my HSA card)

1 edge shave gel, paid $1.20 on my Walgreens gift card and got $3.00 RR

1 chapstick and 4 sticker books, paid .56 on my gift card and got $2.00 RR

So no cash out of my pocket and the same amount of RR I started with!

What to Do with Free Biscuits


I got 13 cans of various kinds of free biscuits at Harris Teeter last week. So this morning, I fixed monkey bread. It is one of my hubby's favorite recipes that his mom made for him.

Here is the fattening recipe:

1/2 cup of sugar
1 teaspoon cinnamon
2 big cans or 3 small cans of Pillsbury Grands Homestyle Biscuits
1 cup of firmly packed brown sugar
3/4 cup of butter, melted

(you can add 1/2 cup of walnuts and/or raisins)

1. Heat oven to 350 degrees and grease a tube pan
2. Mix sugar and cinnamon in large ziploc bag. Separate dough and cut into fourths. Shake dough in bag to coat, and arrange in pan.
3. Mix brown sugar and butter, pour over biscuits.
4. Bake 28 to 32 minutes, until golden brown, and not doughy
5. Cool for 10 min, turn upside on serving plate, and serve warm.

This is a great recipe for brunches as well!
